About the Job

The Food & Beverage (F&B) Operations Manager provides primary oversight, development, and management for all of WindRiver's culinary offerings, services, and related business units.

The F&B Operations Manager ensures all operational policies and procedures align with WindRiver's goals and mission and guarantees a five-star and unparalleled guest experience.

Duties & Key Responsibilities

Leadership & Strategic Planning

  • Maintain comprehensive knowledge of, and ensure compliance with, regulatory rules and standards relevant to the F&B Department including but not limited to :
  • Occupational Safety and Health Administration (OSHA)
  • U.S. Department of Labor
  • State and local health departments
  • Participate in scheduled or impromptu Executive Team, department, and other meetings.
  • Improve existing business and increase revenues by identifying areas for growth through department offerings, expansion possibilities, and customer loyalty.
  • Act as an Ambassador for WindRiver, maintaining an up-to-date and effective level of knowledge about all WindRiver activities, community areas, member offerings, and events.
  • Develop close working relationships with WindRiver department and business unit heads including Marketing, IT, Accounting, Member Services, and Maintenance to ensure F&B's understanding and utilization of WindRiver's internal processes and intercompany communication standards.
  • Act as a model for all Employees, abiding by all company policies and procedures outlined in the Employee Handbook and other documents, and ensuring the integrity of WindRiver's values, principles, and standards in decision-making and interactions with others.

Member & Customer Service

  • Train staff on five-star hospitality, etiquette, appropriate engagement and communication, and gracious upselling to Members' personal tastes and preferences.
  • Maintain member and guest satisfaction by handling inquiries, concerns or comments and providing solutions.
  • Increase member satisfaction and repeat business by proactively soliciting feedback from members, guests, and co-workers and implementing service improvement ideas.
  • Maintain consistency of service by being aware of and prepared for all events, large parties and reservations that may affect food and beverage service operations.
  • Develop an efficient system for taking reservations and providing confirmations.

Operations

  • Develop and maintain visual and presentation standards for all F&B managed areas and ensure proper space preparation, including set-up of tables, chairs, linens, table settings, glassware, etc.
  • Ensure that all F&B staff are in proper uniform and adhere to WindRiver's appearance standards.
  • Maximize food and beverage sales by personally and directly reaching out to Members to introduce them to Citico's, invite them to dine, and inform them of upcoming specials and happenings.
  • Develop, implement, and train staff on F&B Operational Policies and Procedures including opening & closing tasks, cleaning standards, end-of-day reporting, and cash handling and reconciliation.
  • Ensure proper food handling procedures including the proper dating and storage of all food items and alcohol.
  • Collaborate with the Executive Chef in the creation of menus and menu pricing as needed.
  • Conduct regular inventories of F&B goods including ingredients, beverages, china, glass and silverware.
  • Manage the upkeep and maintenance needs of all physical F&B locations and equipment, including Lakeside Inn and Citico's.
  • Lead preparations of annual F&B budgets and business planning.
  • Ensure all F&B areas are properly secure upon departure and that all lights, equipment, doors, etc. are turned off or locked.
  • Develop strong working relationship with Real Estate Sales Team to ensure a seamless experience for Discovery Tour and other guests to the Lakeside Inn and provide requested reporting on such.
  • Maintain a regular working schedule in line with the needs of WindRiver and F&B staff, ensuring availability to work alongside staff and fill-in as needed.

Personnel

  • Work with HR to recruit and hire staff.
  • Manage and train staff in all technical and non-technical aspects of their role including WindRiver standards of quality and service.
  • Ensure proper staffing levels at all times, filling in as needed.
  • Create, maintain, and distribute weekly schedules for staff and communicate changes as appropriate to all.
  • Maintain accurate daily and weekly punch details for F&B staff.
  • Manage employee relation issues and review incidents with the Human Resource Manager.
  • Complete and administer annual employee performance reviews.
  • Evaluate and supervise performance and carry out coaching and disciplinary action as needed, in accordance with the WindRiver's policies and applicable laws.

Qualifications

  • 4+ years' experience in full-service restaurant; country club, hotel banquet a plus
  • 1 year in a bartending role with a full bar; country club, hotel banquet a plus
  • Must be a minimum of 18 years old
  • Current TN ABC license
  • ServeSafe Certified preferred
  • High School Diploma required; Bachelors Degree preferred

Knowledge / Skills / Abilities

  • Must be willing to work weekend, holiday, and evening shifts
  • Understanding of restaurant etiquette and operations
  • Expertise in health and safety standards and regulations
  • Ability to improvise and make decisions based on business or guest needs
  • Must be able to maintain professional composure while managing large groups quickly and efficiently
  • Must be able to demonstrate positive model of leadership, respect, and behavior for staff to emulate and follow
  • Must be able to preserve exceptional levels of customer service in a fast-paced environment
  • Excellent track record of communication skills working as a team player and manager
  • Be willing to attend continuing education courses and training to further develop knowledge, skills, and abilities

Physical Requirements : Must be able to bend, stoop, climb stairs, twist, kneel, lift, push, and pull items weighing 55lbs.

Must be able to stand and continuously move throughout the workday. Must be willing to work outdoors and be comfortable in varying weather.
