Job Title : Production Manager

Reports To : Kitchen Manager

FLSA Status : Non-Exempt

Summary : Under general direction of the Kitchen Manager, to be responsible for a donut shop operation, to include the production of quality baked goods according to stringent deadlines, based on a precise knowledge of all of the company outlined recipes.

Duties and Responsibilities include the following. Other duties may be assigned.

  • Must have open availability and reliable transportation.
  • Must speak fluent English and have the ability to train staff in English; other languages highly desirable, especially Spanish (a pay differential is available for bilingual Managers).
  • Must demonstrate mastery of the Baker I, II, III, and also Assistant Production Manager job descriptions.
  • Accomplishes restaurant human resources objectives by recruiting, selecting, orienting, training, assigning, scheduling, coaching, counseling, and disciplining employees;
  • communicating job expectations; planning, monitoring, appraising, and reviewing job contributions; planning and reviewing compensation actions;

enforcing company policies, procedures, standards and processes.

  • Accurately tabulate payroll for all back of the house staff and deliver it to the Store Manager and / or General Manager.
  • Estimates food costs and profits; adjusts and manages staff in order to achieve costs and profit goals.
  • Controls costs by reviewing portion control and quantities of preparation; minimizing waste; ensuring high quality of preparation.
  • Maximizes restaurant profitability by ensuring portion control; monitoring accuracy of charges.
  • Maintains safe, secure, and healthy environment by establishing, following, and enforcing sanitation standards and procedures;
  • complying with legal regulations; securing revenues; developing and implementing disaster plans; maintaining security and sprinkler systems;

maintaining parking lot and walkways.

Maintains ambiance by controlling lighting, background music, linen service, glassware, and utensil quality and placement;

monitoring food presentation and service.

Updates job knowledge by participating in educational opportunities; reading professional publications; maintaining personal networks;

participating in professional organizations.

  • Enhances department and organization reputation by accepting ownership for accomplishing new and different requests; exploring opportunities to add value to job accomplishments.
  • Performs other duties as assigned by the Kitchen Manager, Director of Company Operations and / or Chief Operations Officer.
