Description
The Food Service Manager must perform supervisory functions which result in an efficient and effective dietary department.
The FSM plans, organizes, coordinates, directs, and conducts activities of the dietary department to provide nutritious and palatable foods to the residents.
The FSM must strive to meet professional standards of food preparation and safety. The FSM manager reports to the facility Administrator and works closely with the Corporate Chef and the facility dietitian.
Salary $48,500 to $63,450 based on experience.
PROCEDURE : The job requirements include :
- The FSM is responsible for the orientation, training and supervision of the dietary staff. The FSM is responsible for the entire food service operation.
- The FSM is responsible to make sure all employees are able to appropriately use and clean dietary equipment. The FSM is responsible for the care of all dietary equipment.
- The FSM develops and maintains an effective inservice program to ensure employees remain proficient in duties and the food service operations remain within appopriate standards.
- The FSM conducts meal rounds to supervise the delivery of meals to the residents. The FSM is available to the residents and their families in regards to food preferences and suggestions.
Aquaints self with the likes and dislikes of the residents.
- The FSM will supervise all work areas including preparation, production, stock rooms and the dish room area. Standards of safety and sanitation will be maintained.
- The FSM is responsible for the purchasing of high quality foods. The FSM will make certain that high quality foods are received from the vendors.
- The FSM will participate in menu planning and development.
- The FSM will participate in Performance Improvement by completing PI audits and attending PI meetings.
- The FSM is responsible for inventories and stock rotation.
- The FSM will cater for special events. He / She will work with the Activity Director for special events planned for the residents.
- The FSM will make arrangements for first aid treatment and accident / incident reports.
- The FSM will complete performance evaluations for dietary employees. He / She will also complete the appropriate disciplinary reports.
- The FSM will have effective communication with the dietitian / diet tech and other facility disciplines to ensure team work and quality patient care.
- The FSM / executive chef must be a certified dietary manager or have an associate degree and / or certification in the culinary arts.
