Job Description

The Ivy Hotel Baltimore is seeking to add a dedicated culinary professional to its ranks. This rare opportunity allows for the chance to join the culinary team of a Relais & Chateaux property which is a global leader in culinary excellence as well as setting standards for the rest of the world.

Magdalena is an American Contemporary restaurant running a French brigade-style kitchen with Chef Scott Bacon at the helm.

The Magdalena practices refined culinary techniques for an almost entirely locally driven menu including whole animal butchery / utilization, methods of seasonal preservation, as well as in-house baking and pastry to create an artistic expression of from scratch Maryland.

The team at The Ivy Hotel and Magdalena are taking our time to find the right candidates as we are offering high reward to the team that will take us to a nomination.

Does your ideal work week look like preparing your weekend service by breaking down whole fish, dry aging ducks, drying spices, pickling harvest end produce, going to farms to pick up seasonal bounties, clipping flowers for garnish, and then leading a world-class team into a sold-out weekend to perfectly execute dinner service with regional defining cuisine?

Magdalena is closed Sundays and Mondays with a last seating during the week at 9 and weekends at 10.

Qualifications

The Ideal Candidate :

  • Exceptional ability to remain on brand and identify with Chef Bacon’s style, cuisine, and leadership
  • Can hold themselves accountable for work that needs to be done and constantly identify solutions to keep the team on track
  • Ability to motivate and bring a team up to withheld standards quickly and efficiently
  • Understands the importance and value of continued and consistent standards of excellence in all departments
  • High adaptability to strong pressure and new ingredients as well as new styles of cooking
  • Has worked in a brigade-style kitchen with a high capability for consistent quality at high-paced functionality
  • Will come standard with a high drive to continually be better, a built-in understanding of job versus career
  • Proficient knife skills on par with a knife as an extension of one's arm
  • Can be an on par stand in for the Executive Chef as needed without compromise
  • If missing any of the above, at least having a strong desire and dedication to learn

Previous knowledge and experience in high functionality of maintaining logs, ordering, delegation, safe practices, HAACP, punctuality, mise en place, managing multiple employees, and problem-solving.
