Chef de Cuisine - Fradei Group
We are seeking a dynamic and creative Chef de Cuisine to join our culinary team at the Fradei Group. The successful candidate will ensure all kitchen operations are running smoothly and efficiently while maintaining the highest quality standards in food production and presentation. This role will work closely with the Executive Chef to develop new menu items and oversee all aspects of the kitchen.
Duties and Responsibilities :
- Plan, organize, and direct all culinary activities in the kitchen – you are the kitchen leader on a day-to-day basis
- Train, mentor, and manage kitchen staff, including building weekly schedules
- Assist in developing and implementing new menu items based on seasonal and regional ingredients
- Document recipes and assist in estimating food costs
- Ensure all dishes are prepared according to recipes and quality and presentation standards
- Record and monitor weekly food costs
- Monitor food inventory and order supplies as needed
- Ensure all kitchen staff adhere to health and safety regulations
- Monitor and maintain the cleanliness of the kitchen
Chef de Cuisine Requirements and Qualifications
4-5+ years of culinary experience preferred, in New York City or another large metropolitan areaProven experience in a kitchen manager roleThorough knowledge of French cooking techniques and ingredientsExcellent understanding of food safety and sanitation regulationsA thoughtful approach to food presentationStrong organizational and leadership skillsAbility to remain calm and professional in a fast-paced environmentA positive, can-do attitudeA culinary degree or certificate is preferred, but not required
