Role Description
This is a full-time General Manager role at Paulie Gee's Logan Square located in Chicago, IL.. The General Manager will be responsible for the day to day operations of our Logan Square restaurant, which include leading our exceptional team, ensuring high quality of food being served, along with building / maintaining an exceptional service experience for guests. They will work hand in hand with our leadership / administrative team (Special Events / Catering, other restaurant teams) on various projects as they come up, and be a strong representative of our company.
Responsibilities :
- Demonstrates effective leadership in running a profitable business
- Demonstrates ability to make a woodfired Neapolitan inspired style pizza and Detroit style pizza from start to finish, which includes making batches of dough, preparing basic ingredients involved in making a cheese pizza, stretching a dough properly, topping a pizza properly, firing and finishing the pizza properly.
- Able to work the line and execute high quality pizza multiple times, along with any other primary items of business (salads, etc.)
- Ability to work multiple front of house positions (Host, Busser, Server, Bartender) to provide backup for operations
- Regularly interact with guests each day to check on quality of service and food, and build relationships to grow repeat business from guests
- Ensure quality of food being served meets the expected standards
- Utilizes POS to run necessary reports for the purposes of paying city / state taxes and is properly and timely paying taxes, without incurring penalties or interest
- Accurately inputs payroll for employees on a bi-weekly basis
- Be available and responsible for any operational issues that need to be addressed at PGLS, including but not limited to utility problems, staffing issues / concerns, etc. (You are where the buck stops!)
- Actively engages in social media account PGLS which includes
- Minimum one Instagram feed post per day, with at least 3 video reels per week with cross post to Facebook
- Minimum two Instagram stories per day
- Respond to all social media engagement / comments (Instagram, Facebook, Yelp, Google) in a timely fashion with appropriate similar length comment. With rare exception, every comment should have a response. Instagram / Facebook comments within 48 hours, Google reviews within 5 days.
- Social media programs being required of use may change or be increased with 60 days notice from majority partner.
- Able to execute inventory counts and manage ordering processes effectively to prevent shortages and reduce waste
- Provides monthly profit and loss reports to majority partner, with quarterly reports to investors as a whole after review of the majority partner
- Holds regular meetings, minimum once every three months, with all staff at Paulie Gee’s Logan Square regarding company performance, improvements, opportunities, events coming up, etc.
- Ensure all aspects of the restaurant maintain cleanliness standards that meet City of Chicago health and safety inspector guidelines
- Be responsible for maintaining proper permits / certifications for all staff members and ensuring they are current with Illinois and City of Chicago requirements
- Be responsible for maintaining an HR file on each employee that contains application information, permits, certifications, reviews, etc.
- Establish and consistently review opening / closing lists to ensure safety and cleanliness of the restaurant
- Be responsible for and hold staff members accountable for opening / closing lists
- Utilize Restaurant Systems Pro for labor planning, inventory management, and food costing to run an effective business. (Software expectations may change based on company usage / discretion)
- Other duties, as assigned and as occur
