Food Facility Production
Since November 1983, Napoleon’s Bakery has been helping make Hawaii sweeter. Our philosophy is to offer fresh, high quality Island favorites, made with only grade A ingredients and mostly from scratch.
We are seeking a Bakery Production. You will serve a key role in assisting other staff members in all phases of operations including the preparation of breads, danishes, donuts and various other bakery items.
Knows how to use the mixers, ovens, divider / rounder, depositors, or other equipment safely. Cleans and cares for the equipment to ensure its long life.
JOB QUALIFICATIONS
Availability to complete a 40 hour work week in various shift times with various shift duties as described below
All positions may perform other duties as assigned by management to support the daily operations of the bakery plant
Ability to stand or walk up to 8 hours / day on a regular basis
Ability to lift, push and pull an average of 50 pounds on a regular basis
Ability to do simple math (add, subtract, multiply and do simple fractions)
Work with busy kitchen environment
DAY PRODUCTION RESPONSIBILITIES
Production : Complete pounding rounds and cutting brownies, crumb cakes, and corn bread in mixing roomSet up and tags merchandise boxesPacks frozen products properly store and rotate the products.
Preps and confirms next day's production total count
- Operates pan washing machines safely and correctly
- Assist the other departments in doing basic production, such as scooping cookies, shaving chocolate, assisting the sheeting room in production
COOKIE DEPARTMENT RESPONSIBILITIES
- Prepares cookie dough mixture
- Bakes, packs, and seals cookies into designated packaging
- Set-ups, packs and seals the retail turnovers into boxes
- During the holidays, makes gingerbread people, set-up boxes for Thanksgiving and other holiday production that is needed
SHEETING ROOM RESPONSIBILITIES
- Works several positions on the make-up table (water, bagging, folding, press and cut, pick-up, forming pretzels danishes and flaky donuts)
- Presses and forms dough, roll cinnamon danish, fold butterhorns
- Packs frozen products for storage
- Pans and screens products
- Set up and tags merchandise boxes
- Re-stocks supplies such as setting up the butter, making cinnamon mix and paper goods
- Assists with the dishwashing and general cleaning of the store
- General clean up includes wiping walls and scrubbing floors
- Performs general maintenance of the sheeting room equipment
CAKE ICER RESPONSIBILITIES
- Produce small baked products (e.g. cream puffs, cupcakes, etc)
- Construction of cakes : Fill and ices
- Performs general housekeeping of work areas
- Assists in the dishwashing area and the general maintenance of the store
SWING PRODUCTION RESPONSIBILITIES
- General Production : cutting, scaling, rounding, slicing planning, packing of rolls and buns
- Packing baked products
- Completes day shift production if necessary
- Works the dishwashing area, leaving it in a clean condition when finished
Graveyard Production responsibilities to be discussed in interview for interested candidates who qualify.
ENVIRONEMENTAL CONDITIONS
- Able to work in a hot / cold environment
- There are both ambient temperatures and A / C rooms. The ambient temperature can reach at times in the 100’s and the A / C rooms go as low as 50 degrees
- There are also walk-in chills and freezers where temperatures go as low as minus 10 degrees

This food handling position requires a TB Clearance by the State of Hawaii, Department of Health
