- Using proper cutting techniques for beef lamb fish and pork.
- Carve precise cuts of meat using carving knives.
- Disjointing roasts and poultry slicing uniform pieces of meat and arranging individual portions on plates.

- Must be able to stand for long periods of time
- Must have experience as a carver and able to work without supervision
