JOB DESCRIPTION
Cork & Flame seeks a Sous Chef who identifies priorities for each shift focusing on food quality, cleanliness, sanitation and running a smooth shift.
The Sous Chef builds maintains accountability for achieving success and delivers on promises to our team, guests, vendors, and our community.
In conjunction with the Chef de Cuisine and Executive Sous Chef, the Sous Chef assists with supervising and managing all aspects of the kitchen and production of all items, while keeping with our standards of food quality and restaurant cleanliness.
Qualified candidates will have culinary experience in a kitchen-driven or fine-dining atmosphere.
ESSENTIAL FUNCTION STATEMENTS
- Work under the direction of our chefs to complete assigned tasks daily.
- Support other BOH Team Members by modeling specific tasks or procedures, communicating expectations, and following up to increase their performance and morale.
- Set up kitchen with tools, preparation sheets, and materials to ensure the Team Members have the tools needed to prepare fantastic and safe food.
- Follow prep lists and recipes.
- Learns and executes specific dishes on their prescribed station.
- Works all stations in the Back of House to assist Team Members during peak times and to maintain service and quality standards.
- Complies with all health department requirements of food safety and staff hygiene including but not exclusive to labeling, time, and temperature.
- Ensure sanitation procedures are in place and the restaurant is clean and organized at all times.
- Actively participates in the positive relationship between FOH and BOH teams by maintaining steady stream of communication with entire staff.
- Supports BOH by multi-tasking
- Follows safety and emergency procedures to protect staff, guests, and property.
- Reports any maintenance deficiencies immediately to appropriate personnel.
- Maintains thorough understanding of industry and stays abreast of industry trends.
- Demonstrates courteous and cooperative behavior when interacting with public and staff; acts in a manner that promotes a harmonious and effective workplace environment.
- Predominantly works the PM shifts through the entirety of service.
