Must be ServSafe certified as a food service manager and handler and have at least 2 years of experience in food service management, or restaurant or institutional food service experience planning, preparing, and serving regular diets in a healthcare setting, including knowledge of food handling, service, and sanitation.
Candidate will be responsible for managing and supervising all kitchen operations Monday - Friday 9am to 5pm, to ensure provision of a continental breakfast, lunch, and a PM snack.
Candidate will be responsible for coordinating and ordering all food, and all other food service needs of the center.
Essential Responsibilities
- Ensure all meals provided meet Senior Nutrition Program Dietary Guidelines
- Oversee kitchen staff to ensure the kitchen is maintained and sanitary as required by local health codes
- Maintain the rules and regulations set forth by the state and local authority
- Keep attendance records and program statistics and prepare monthly reports as requested
- Order food and supplies in a timely fashion based on menu requirements
- Maintain accurate inventory of food, supplies and equipment; all food must be properly stored, labeled, and rotated on shelves
- Perform other tasks that may be required
- Supervises and directs work in the food service department in accordance with established policies and procedures.
- Inventories and orders food service supplies.
- Prepares work schedule; monitors, and records employee attendance and performance
- Prepares and approves employee time cards and food consumption reports
- Identifies equipment problems and schedules repairs with service personnel
- Adheres to all sanitary regulations governing handling and serving of food
- Ensures that meals are prepared and served on schedule
- Maintains established departmental policies and procedures, objectives, quality assurance program and safety standards
- Coordinates main kitchen production for a variety of services, arranges staffing, physical layout and set up as needed
- Prepares work schedules, assigns personnel, evaluates work performance and makes recommendations for personnel actions
- Ensures responsibility for the quality and quantity of food served
- Coordinates loading, delivery, and pick-up of food carts on schedule
- Records temperatures during shift for fridges, freezers, dishwasher and pot sink
- Completes incident reports as needed and files appropriately
- Ensures cleanliness of all areas including : main kitchen, dietary hall, clean pot area, prep room, back room, etc.
- Monitors all food storage areas for proper storage, labeling and dating
- Properly utilizes and manages staff at all times for efficient job flow and cleaning needs
Requirements
- Ability to maintain current programs and develop new programs
- Ability to work independently with good judgment
- Knowledge of geriatrics and current trends in older adult services
- ServSafe certification required
- Ability to obtain First Aid and CPR certificates and cards
- Ability to evaluate kitchen and cooking skills of others and arrange necessary training
Physical Requirements
- Ability to sit, walk, stand, bend, squat, climb, kneel and twist on an intermittent or sometimes continuous basis
- Ability to grasp, push and pull objects such as files, file cabinet drawers and reach overhead
- Ability to lift 25 lbs.
