What you will be doing
- Plan, oversee, and assist in daily culinary operations of the banquet kitchen related to banquets.
- Assign detailed preparation and duties to banquet kitchen staff to ensure efficient event execution.
- Select, order, inspect, and use high-standard food products for all menu items as per Banquet Event Orders (BEO).
- Oversee and assist in the production and presentation of menu items.
- Monitor receipt, storage, and rotation of food to comply with health regulations, including proper labeling, dating, and storage.
- Evaluate cooks' performance, providing guidance and discipline as needed.
- Maintain effective communication with the Executive Sous Chef / Executive Chef regarding food production.
- Uphold professionalism in the banquet team through proper language, uniforms, hygiene, and employee relations.
- Engage in self-education about the hospitality industry using available resources.
- Lead the Banquet Kitchen team during all events, ensuring quality food preparation and presentation.
- Train staff on menu items, ingredients, preparation methods, and unique tastes, including Hot and Cold Kitchen operations.
- Operate and maintain all departmental equipment, reporting malfunctions.
- Manage inventory and purchase supplies within budget constraints.
- Review staffing levels to meet guest service, operational, and financial needs.
- Train staff on safety procedures and supervise adherence to loss prevention policies.
- Investigate reports and follow up on staff incidents.
- Set a positive example in guest relations.
Requirements
Must be able to lift, push, pull, and carry moderate weight. Able to walk / stand for extended periods, with frequent bending and twisting. Capable of using culinary tools and tasting / smelling.
Education & Experience Qualifications
High school diploma or GED, or equivalent combination of education and experience.
Ability to interact with guests for feedback, respond to complaints, and improve service.
Empower and train staff to deliver excellent customer service.
Observe and provide feedback on service behaviors, focusing on continuous improvement.
Support ongoing training and onboarding for new hires, including cross-training.
Communicate performance expectations and participate in performance appraisals.
Work flexible shifts including holidays, weekends, and rotating schedules.
Must be Management ServSafe certified. A culinary degree or formal training is strongly preferred.
