Job Summary
Summary : Prepares high quality concessions food, manages a small team of prep cooks across multiple outlets and serves customers in accordance with applicable federal, state and local standards, guidelines and regulations.
- Forecast and prepare appropriate quantity of product for game days with an emphasis on minimizing waste.
- Ensure back of house is set up for maximum efficiency and high volume output across multiple outlets.
- Coach and lead a team of 4-10 prep cooks across multiple outlets to ensure guests are receiving high quality food items in a quick, consistent and efficient manner.
- Ensure equipment is inspected daily, repair needs and addressed and reported promptly.
- Obtains daily production schedule and preparation requirements from the Chef.
- Prepares items on production sheets following established quantities and recipes.
- Completes and follows daily production worksheets and waste log sheets. Tastes completed meals to ensure quality.
- Operates and cleans equipment per department procedures after each use.
- Stores, labels and dates all food items according to policy. Follows HACCP guidelines.
- Completes all required documentation, reports, logs as required.
- Complies with federal, state and local health and sanitation regulations and department sanitation procedures.
- Uses approved food recipes and production standards to ensure proper quality, serving temperatures and standard portion control.
- Operates and cleans equipment per department procedures after each use.
- Stores, labels and dates all food items according to policy.
- Follows HACCP guidelines to ensure quality and safety of food supply.
- Resolves customer concerns.
- Performs other duties as assigned.
Requirements :
- Excellent customer service skills.
- Strong organizational skills.
- Ability to multi-task in a fast-paced environment.
- Adhere to all safety and sanitation requirements.
- Valid food handler card and / or alcohol certification may be required.
- Open availability days, evenings, weekends, and / or Holidays.
Qualifications
Previous culinary or related experience preferred
